- 1 medium chopped cauliflower
- 1 pkg leeks (3 leeks), chopped
- 4 apples, sliced
- 2 TBSP olive oil
- salt and pepper to taste
- 4-6 cups of soup stock (pick your fave!)
- Preheat oven to 350F.
- In a large roasting pan, toss chopped vegetables and apples with olive oil, salt and pepper.
- Roast until tender (about 30 mins).
- Blend in blender with 4-6 cups of your choice of stock.
